Kristine & I want to keep Grandma’s delicious stollen recipe in our tradition, so we made it for the first time this year. This recipe is her original cut 1/4, which yielded 2 medium loaves.
Preheat oven to 325º F.
1 1/4 lb. all-purpose flour
3/4 c. white sugar
5 t. (1 T. + 2 t.) Dr. Oetker baking powder
1/2 t. salt
1 t. Dr. Oetker vanilla sugar
1 1/2 sticks cold butter
3/4 lb. cottage cheese, blended
1/3 c. candied citron, diced
1 c. light raisins, moistened with 1/2 vial Dr. Oetker Bitter-Mandel Aroma
zest of 1 lemon
1 c. slivered almonds
Add 1/2 vial Dr. Oetker Bitter-Mandel Aroma to 1 c. raisins. We used mostly golden & a few Thompson seedless.
We couldn’t find candied citron so we made candied lemon & orange peel from Martha Stewart’s recipe. Prepare 1/3 c.
Mix together dry ingredients in a mound
Cut butter into small pieces & work in with your hands to the size of peas
Make a well & add eggs (beat with fingers before mixing)
And lemon zest
Incorporate all ingredients from the outside in. When partway mixed, add fruit & nuts
Finish mixing until just together & form loaves. Bake for 40 - 50 minutes until golden brown & a toothpick comes out clean. They will spread wide.
